Farmer Cheesecake (Healthy-ish Style)

This traditional Russian delight is packed with flavor, protein and my childhood memories 🙂

Farmer Cheese is similar to cottage cheese, though higher in protein, lower in carbs (hardly any carbs!), it has tangy flavor – similar to greek yogurt and the consistency of ricotta cheese.

Here’s the recipe (6 servings):

  • 2 lbs Farmer Cheese (most grocery stores have it – Friendship brand is most popular)
  • 3 eggs
  • 6 Tbsp sugar or sugar substitute (I use Allulose mix with Monk fruit and Stevia by Keto Genie; Swerve would also work)
  • 6 Tbs cream of wheat + 1 Tbsp to cover the baking dish
  • 1/2 cup raisins
  • 2 Tbs butter
  • 1 tsp Vanilla extract
  •  1 tsp baking powder
  • pinch of salt
  1. Separate egg whites from yolks
  2. Beat egg yolks with sugar or sugar substitute and vanilla till it tuns whitish
  3. Mix yolk mixture with Farmer Cheese
  4. Add cream of wheat and let sit for 15 min, add raisins
  5. Add salt to egg whites and beat with mixer till peaks form
  6. Gently fold egg whites into farmer Cheese mixture, don’t overmix to preserve airiness
  7. Spray baking dish with non-stick oil/butter spray or use some of the melted butter to oil it. Then sprinkle with some of the cream of wheat to prevent the cake from sticking
  8. Cover with foil and bake at 350 F for 30 min. Remove and spread melted butter on top and bake uncovered for another 20-25 min or until it turns golden brownish at 375 F
  9. Cool completely and enjoy!
