Farmer Cheesecake (Healthy-ish Style)
This traditional Russian delight is packed with flavor, protein and my childhood memories 🙂
Farmer Cheese is similar to cottage cheese, though higher in protein, lower in carbs (hardly any carbs!), it has tangy flavor – similar to greek yogurt and the consistency of ricotta cheese.
Here’s the recipe (6 servings):
- 2 lbs Farmer Cheese (most grocery stores have it – Friendship brand is most popular)
- 3 eggs
- 6 Tbsp sugar or sugar substitute (I use Allulose mix with Monk fruit and Stevia by Keto Genie; Swerve would also work)
- 6 Tbs cream of wheat + 1 Tbsp to cover the baking dish
- 1/2 cup raisins
- 2 Tbs butter
- 1 tsp Vanilla extract
- 1 tsp baking powder
- pinch of salt
- Separate egg whites from yolks
- Beat egg yolks with sugar or sugar substitute and vanilla till it tuns whitish
- Mix yolk mixture with Farmer Cheese
- Add cream of wheat and let sit for 15 min, add raisins
- Add salt to egg whites and beat with mixer till peaks form
- Gently fold egg whites into farmer Cheese mixture, don’t overmix to preserve airiness
- Spray baking dish with non-stick oil/butter spray or use some of the melted butter to oil it. Then sprinkle with some of the cream of wheat to prevent the cake from sticking
- Cover with foil and bake at 350 F for 30 min. Remove and spread melted butter on top and bake uncovered for another 20-25 min or until it turns golden brownish at 375 F
- Cool completely and enjoy!
